Apple, Banana and Sweet Potato Smoothie

Yield: 4 cups (960 ml)





Ingredients

1 medium sweet potato, cooked, unpeeled and cooled
1/2 cup (120 ml) milk
1 small banana
1/4 golden delicious apple, halved, seeded
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tablespoon honey or other sweetener, to taste
1 teaspoon pure vanilla extract
1/4 lime, peeled
2 cups (480 ml) ice cubes

1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 10, then to High.
4. Blend for 1 minute or until desired consistency is reached.

Variation: For a non-dairy alternative, substitute light or regular soy milk for skim milk.

    Frosty Basil Lemonade

    Yield: 3 cups (720 ml)





    An icy refreshing blend of citrus and herbs.
    Ingredients

    3 cups (720 ml) water
    1 1/2 lemons, peeled, halved, seeded
    1/4 cup (50 g) sugar or other sweetener
    1/2 cup (20 g) fresh basil leaves
    1 cup (240 ml) ice cubes
    1. Place all ingredients into the Vitamix container in the order listed and secure lid.
    2. Select Variable 1.

    Vitamix Pizza Soup

    Yield: 4 1/2 cups (1.1 l)


    Vita-Mix Pizza Soup




    Ingredients

    1 clove garlic, peeled, chopped
    1/2 cup chopped onion
    4 mushrooms, sliced
    1/2 cup chopped green pepper
    1 tablespoon extra virgin olive oil
    8 slices pepperoni
    1 1/2 oz. Italian sausage - cooked & drained (broken into small pieces)
    1 1/2 cups (360 ml) boiling water
    3 large Roma tomatoes, quartered
    2 1/2 tablespoons (45 ml) tomato paste
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1/4 teaspoon black pepper
    3/4 teaspoon salt
    2 tablespoons grated parmesan cheese
    1/2 cup grated mozzarella cheese
     
    1. Sauté garlic, onion, mushrooms, and green pepper and one Roma tomato in the olive oil until tender.
    2. Mix pepperoni and cooked sausage together in a small bowl. Set aside.
    3. Place half of the sautéed vegetable mixture, 2 tomatoes, tomato paste and seasonings into the Vitamix container in the order listed and secure lid.
    4. Select Variable 1.
    5. Turn machine on and slowly increase speed to Variable 10, then to High.
    6. Blend for 1-3 minutes or until heavy steam escapes from the vented lid.
    7. Reduce speed to Variable 2 and remove the lid plug.
    8. Add remaining half of sautéed vegetables, meat mixture and cheeses through the lid plug opening.
    9. Blend for an additional 5-10 seconds.

    Tomatoes May Help Reduce Cancer Risk

    The Journal of the National Cancer Institute published the results of a study conducted by Harvard University researchers in December 1995 which showed an association between consuming a diet rich in tomato-based foods and a decreased risk of prostate cancer. The researchers analyzed the eating habits of over 47,000 men between the ages of 40-75 for six years.
    They found that the consumption of tomatoes, tomato sauce, tomato juice and pizza was associated with a reduced risk for developing prostate cancer.
    Researchers suspect that lycopene, an antioxidant nutrient found in tomatoes, may be responsible for this possible protective effect.

    What are Lycopenes?

    Lycopenes are part of the carotenoid family of pigments that create the color in certain fruits and vegetables. And like essential amino acids, they are not manufactured in the body. Research shows that lycopenes are the most powerful antioxidant in the carotenoid family.
    Antioxidants, which include vitamin C and E, are important in protecting the body from free radicals which degrade many parts of the body.
